By varying the degree of esterification of the sucrose molecule it is possible to obtain emulsifiers with HLB values ranging from 1 up to 16. It is a light yellow powder, a non-ionic surfactant and is used as an emulsifier in dairy products, baked goods, soft drinks, jelly, cake and candy. Sucrose Fatty Acid Esters are a mixture of mono-, di-, and tri-esters of sucrose with fatty acids derived from edible vegetable or hydrogenated vegetable oils and fats.
