Mazzi Caffè produces specialty coffees of the Mundo Novo variety, at Fazenda Mundo Novo- Bom Sucesso, Minas Gerais, IG is Campo das Vertentes, average altitude 970 meters. Our coffees are 100% Arabica, certified in the Certifica Minas Café program that recognizes the best practices used in coffee production. Our harvest is selective, coffees harvested by hand, first we harvest the ripe fruits and then we return to harvest the ripe fruits that were left on the foot of coffee until they ripen.
The coffee fruits are taken to the suspended terrace to dry and another part is pulped, we control the maturation, after drying are taken to the tulha to rest for 30 days before being benefited. In the processing stage we separate the coffees by type of plot, eliminate the coffee hull and start for the rebenefit stage and separate the beans by size in the sieve.
The last step is the roasting where we develop a roastprofile for each batch of coffee, we pack and go for sale.
